Oregano
is frequently used in Italian cuisine. Greek oregano is also
called "joy of the mountain.” Mexican oregano or wild
marjoram is the plant grown in America. For a more heart-healthy
dish, substitute olive oil for the butter. You may also want to
cook the vegetables in a grill pan over the barbecue grill for a
smoky vegetable medley.
2 tablespoons butter

(16-ounce) bag frozen winter vegetable mix
1
yellow squash, unpeeled and sliced
1 small zucchini, unpeeled and sliced
2
carrots, diagonally sliced
6
green onions, sliced
4
brown crimini mushrooms, sliced
1
teaspoon dried oregano
¼
teaspoon dried basil
½
teaspoon seasoning salt
¼
teaspoon ground black pepper
1.
Melt the butter in a 5-quart sauté pan, add the winter
mix,
squash,
zucchini, carrots, onions and mushrooms.
2. Cover and cook
for 15 minutes on medium heat.
3. Stir in the
oregano and basil. Season with salt and pepper.
Hint:
Yellow squash is delicious on its own when sliced and
fried
over medium heat with a teaspoon of butter.
