Dad's Egg and Ham Muffins

English Muffins

 

My father used to surprise us with these delicious breakfast muffins when we lived in Africa and didn’t have the luxury of a fast-food breakfast. Chopped cooked bacon or fried deli meats can be added to the egg patties.

3 large eggs
2 tablespoons fat-free milk
Pinch salt
Pinch ground black pepper


2 pieces thinly sliced ham, diced
2 slices medium Cheddar cheese
2 English Muffins

 

1. In a medium bowl, whisk the eggs, milk, salt and pepper
    until blended.

2. In a 10-inch frying pan, brown the ham over medium heat.
    Pour in the egg mixture and use a pancake turner to scramble
    the egg until it is almost set. You have to watch carefully as
    the egg sets fast!

3. Press the almost scrambled eggs together into two patties.
    Turn once and then top each patty with a slice of cheese.
    Cover the pan with a lid just until the cheese melts.

4. Serve each ham and egg patty between toasted
    English muffin halves.

    Makes 2 servings
