Dad’s Egg and Ham Muffins
My father used to surprise us with these
delicious breakfast muffins when we lived in Africa and didn’t have the luxury
of a fast-food breakfast. Chopped cooked bacon or fried deli meats can be added
to the egg patties.
3 large eggs
2 tablespoons fat-free milk
Pinch salt
Pinch ground black pepper
2 pieces thinly sliced ham, diced
2 slices medium Cheddar cheese
2 English Muffins
1. In a medium bowl, whisk the eggs, milk,
salt and pepper
until blended.
2. In a 10-inch frying pan, brown the ham over
medium heat.
Pour in the egg mixture and use a pancake turner to scramble
the egg until it is
the egg sets fast!
3. Press the almost scrambled eggs together
into two patties.
Turn once
Cover the pan with a lid
4. Serve each ham and egg patty between toasted
English muffin halves.
