These
tasty little morsels work well for a large party and may be made
ahead of time and kept warm as long as they are covered. Try
these as a side dish to a tenderloin roast, steak, fish or baked
chicken.
2 (10-ounce) boxes frozen chopped spinach
2 cups
herb stuffing mix
2
medium onions, finely chopped
5
large eggs, beaten
¾ cup
butter, melted
½ cup
grated parmesan cheese
1 ½
teaspoons ground black pepper
⅛
teaspoon garlic salt
2
teaspoons seasoning salt
1.
In a 3-quart saucepan, cook the spinach in water to cover
for
about
five minutes. Drain in a colander, pressing out as much
liquid
as possible.
2. In a large bowl,
mix the spinach, stuffing mix, onions, eggs,
butter,
cheese, pepper, garlic salt and seasoning salt.
3. Shape into
bite-size, 1-inch balls and bake on baking sheets
in
a preheated 350°
oven for 20 minutes.
4. Serve these at
your next party and watch them disappear.
