Armenia—the
land of Mount Ararat where Noah docked the ark—is a landlocked
country which stretches between the Caspian and Black Seas.
Armenian cuisine resembles Persian, Greek and Turkish foods.
This dish, which I received from Armenian friends in Africa,
contains Pecorino Romano cheese made from sheep's milk. Lemon
pepper seasoning is a mixture of coarsely ground black pepper
and lemon, and is a modern way to add lemon to a variety of
dishes which originally contained lemon juice. Serve this exotic
dish with the Lemon Lamb Chops.
1 (10-ounce) box frozen chopped spinach, thawed
1
tablespoon butter
3
garlic cloves, crushed in a garlic press
Pinch
salt
Sprinkle
lemon-pepper seasoning
2
tablespoons plain yogurt
˝ cup
shredded Pecorino Romano cheese

In a 10-inch frying pan, cook spinach in just enough
water to
cover
for 5 minutes. Drain well.
2. Fry spinach with
butter and garlic for 5 minutes.
3. Add salt and
lemon-pepper seasoning to taste.
4. Stir in yogurt
and cheese, then heat until the cheese melts.
