Spanakopita,
pronounced "span-uh-koh-pih-tuh," is a versatile Greek
pastry which may be frozen ahead of time. There is no need to
thaw the pastries before baking.
1 (10-ounce) package frozen chopped spinach
6 ounces herbed garlic feta cheese
½ cup finely
chopped yellow onion
½
teaspoon dried oregano
1
teaspoon dried parsley
1
(16-ounce) package phyllo dough thawed in refrigerator
½ cup
butter, melted
1. Open
the phyllo dough package and unroll the pastry sheets.
Keep
the pastry covered with plastic wrap and a damp
kitchen cloth to prevent the edges
drying out.
2. Mix spinach,
feta, onion, oregano and parsley in a bowl.
3. Lay one piece
phyllo dough at a time on a large breadboard.
Brush
1 third lengthwise with melted butter. Fold in thirds so
you
end up with 1 long strip.
4. Place a
tablespoon of spinach mixture at one end and fold one
corner
of strip diagonally over filling. Continue folding over
at
right angles until you end up with a triangle shaped pastry.
Place
on a baking sheet.
5. Bake in a
preheated 350
oven for 20 minutes.
Party-size plate for 10-12 guests
