Lyle's Golden Syrup
Lyle's
Golden Syrup is a favorite sweetener in Africa, New Zealand and
Australia. It is thicker than American corn syrup and is also
known as light treacle or evaporated sugar cane juice in
England. These bar cookies must be cut while warm.
2 cups all-purpose flour
2 cups
flaked coconut
2 cups
thick rolled oats
1 1/2
cups dark brown sugar
1 cup
butter

tablespoons Lyle's Golden Syrup®
2
teaspoons baking soda
2
tablespoons boiling water
1.
Preheat oven to 350°
.
2. In an extra
large bowl, mix flour, coconut, oats and brown
sugar.
Use your fingertips to break up any lumps.
3. Melt the butter
in a 2-quart saucepan over medium heat.
Stir in syrup and simmer until a candy
thermometer
reads 225
°.
In a small bowl, mix baking soda with boiling
water; stir quickly into hot syrup.
4. Pour bubbling
syrup over oat mixture; stir well. Use the back
of
a spoon to press into a 13 x 9 x 2-inch glass baking dish.
5. Bake in the
preheated oven for 17 to 20 minutes. Cut into 16
bars
while still warm. Cool, then remove from pan.
