Living
on a campsite/farm in Africa was a child's dream. A swimming
pool, river, mountain trails and trampoline awaited us after the
short bus ride home from school. At the end of a full day of
adventures we were often suddenly starving. My brothers and I
often invited ourselves to our neighbors for a pre-dinner treat
when these muffins were on the menu.
1 cup all-purpose flour
2
teaspoons baking powder
Pinch
salt
1 cup
shredded cheddar cheese
1
large egg
1 cup
milk
1. Preheat
the oven to 400°
.
2. In a large bowl,
blend the flour, baking powder, salt and
cheese.
Stir in the egg and milk, then mix well.
3. Divide batter
between 10 giant nonstick muffin cups.
4. Bake in
preheated oven for 10 minutes or until golden.
5. Let the muffins
sit for 2 minutes before removing them with a
heat-proof
spatula. They will come out of the pans much more
easily
if you wait. Cheese muffins are delicious served
in
the winter with soup or chili.
