Breakfast Burritos

Scrambled eggs, fried bell peppers, onions and pork sausage make a delicious filling for warm flour tortillas. Leftover bell pepper may be chopped and frozen to be used later when making an omelet or for garnishing a cream soup. I like the sweeter red pepper in this recipe, but you may prefer a mixture of peppers or just green bell peppers. These are delicious when served with heated roasted garlic salsa and Feta cheese.

    ¼ cup pork or turkey sausage
    2 tablespoons chopped red bell pepper
    2 tablespoons chopped red onion
    3 large eggs
    1 tablespoon whipping cream
    1/8 teaspoon seasoning salt
    Pinch ground cayenne
    ¼ cup shredded medium Cheddar cheese
    Two 8-inch flour tortillas

    Roasted garlic salsa
    Feta cheese

1. In a 10-inch frying pan, cook the sausage, bell pepper
    and onion over medium heat until the peppers are soft
    and the sausage is cooked.

2. In a medium bowl, whisk the eggs, cream, salt and cayenne.
    Pour into the frying pan and scramble the eggs with the
    sausage, bell pepper and onion until completely cooked.

3. Sprinkle with cheese and heat just until melted.

4. Warm the tortillas in the microwave for a few seconds. Place
    one tortilla on each plate. Top each tortilla with half the scrambled
     egg mixture. Roll up to form burritos and top with salsa
     and Feta cheese.

     Makes 2 burritos
