Spicy Shrimp and Vegetables  

    This dish is especially spicy and delicious. I use a chicken
    base which is a stock paste. You should be able to find it
    at your local grocery store or at amazon.com. 

    5-7 ounces small cocktail shrimp
    1/2 teaspoon grated ginger (use a special ginger grater)
    1 clove garlic, pressed in a garlic press
    1/2 teaspoon olive oil

    1/2 cup diced red bell pepper
    1/2 cup diced zucchini
    1/2 cup chopped yellow onion

    1/4 cup water
    10 sprays I can't Believe it's not Butter spray
    1/4 teaspoon chicken base
    1 teaspoon soy sauce
    1/2 teaspoon seasoned rice vinegar
    1/8 teaspoon cornstarch
    1/8 teaspoon Chinese five spice powder

 

1. In a small mixing bowl, combine the shrimp, ginger
    and garlic. Place back in refrigerator while preparing
    the vegetables. This gives it time to marinate a bit. 

2. Prepare red bell pepper, zucchini and onion. Place
    in a small bowl. 

3.  In a large frying pan, fry the shrimp in olive oil
     until done. Remove and place on a small plate.

4.  In the same frying pan, quickly cook the vegetables
     just until tender. Add the shrimp back to the pan
     and reheat.

5.  In a small bowl, combine the water, butter spray,
     chicken base, soy sauce, vinegar, cornstarch and
     spice powder. Stir just until most of the water
     evaporates and sauce coats shrimp and vegetables.
     Serve immediately.
