Roast Chicken with
Onions and Apples

Onions and aromatic sweet apples complement succulent kosher chicken. “Kosher” is derived from the Hebrew word “kasher” which means pure or fit for eating. The chicken is soaked and salted in accordance with Jewish laws.

    1 (2 ˝ pound) Kosher whole broiler
    Freshly ground Tellicherry peppercorns
    Seasoning salt
    Sweet paprika
    Poultry seasoning
    Dried parsley
    Olive oil
    1 large yellow onion, halved and sliced
    2 Braeburn apples, peeled and sliced

1.  Preheat the oven to 350°. Set chicken in a 13 x 9 x 2-inch
     glass baking dish. Sprinkle with pepper, salt, paprika,
     seasoning and parsley. Sprinkle with oil.

2.  Arrange onions, then apples around chicken. Bake for 30
     minutes. Baste chicken with any juices, now and then.

3.  Stir onions and apples. Insert a meat thermometer into breast
     and bake for an additional 30 to 45 minutes or until the
     internal temperature reaches 185
°.
