ROAST BEEF sandwiches
with Garlic
Garlic
mayonnaise, also called "aïoli," is easy to make and originated in
Provence, France. Wedge sandwiches may be secured with short bamboo skewers,
then wrapped in waxed paper for picnics.
Garlic Mayonnaise
1
teaspoon olive oil
2 garlic cloves, crushed in a garlic press
1/2 cup mayonnaise
1 teaspoon dried parsley
1/2 teaspoon ground black pepper
Sandwich
1 French bread round
1 pound thinly sliced roast beef
1 (2.25-ounce) can sliced black olives, drained
1 cup shredded medium cheddar cheese
1 cup thinly sliced iceberg lettuce

Garlic mayonnaise: In a
10-inch frying pan, heat the oil and
sauté the
garlic for a few seconds.
2. Place the garlic in a medium bowl. Stir in the mayonnaise,
parsley and
pepper.
3. Sandwich:
Slice the French bread round in half, horizontally.
4. Spread the garlic mayonnaise on
the cut side of bread half.
5. Layer the roast beef, olives,
cheese and lettuce twice on first
bread half. Top
with second bread half. Cut into wedges,
wrap and
refrigerate or serve immediately.
Hint: These
are fun to take on picnics or to take when you go
hiking. Just wrap
them in aluminum foil.
