SANDWICHES
James
Beard—American food writer and author (1903-1985) once said: "Too few
people understand a really good sandwich." There is a universal appeal in a
quick lunch which provides fiber, carbohydrates, protein and minimal fat. Choose
low-fat mayonnaise and turkey breast or low-fat meat choices. Keep cold meats,
breads and lettuce on hand and you will always have a healthy and
easy-to-prepare sandwich.
My husband Rick taught me to make these.
2 slices whole-wheat bread
Low-fat mayonnaise
Dijon-style prepared
mustard
4 Black Forest ham,
turkey breast, or roast chicken slices
Iceberg lettuce
White balsamic vinegar
Greek olive oil
Shredded medium
cheddar cheese
1.
Lay the bread slices on a plate and spread with mayonnaise.
You may also want
to use mustard.
2. Layer your choice of cold meat
slices on one slice. Top with
iceberg lettuce
and sprinkle with vinegar and oil. Top with
cheddar cheese,
then the other slice of bread.
3. Cut in half diagonally and
serve.
Makes 1 sandwich
