Orange
and Carrot Salad
Mint
is an attractive garnish for many foods and contrasts well with this molded
orange gelatin salad. I learned to make this salad while living in Africa where
we grew our own carrots. Needless to say, many of them never made it to this
salad. As children, we would get so excited just when they were starting to
grow, we pulled most of the baby carrots out of the ground to see how big they
were getting.
2 (3-ounce) packages orange Jell-O®
2 cups boiling water
2 cups ice water
½ cup finely shredded
carrots
Mint leaves
