Orange and Carrot Salad

Mint is an attractive garnish for many foods and contrasts well with this molded orange gelatin salad. I learned to make this salad while living in Africa where we grew our own carrots. Needless to say, many of them never made it to this salad. As children, we would get so excited just when they were starting to grow, we pulled most of the baby carrots out of the ground to see how big they were getting.

    2 (3-ounce) packages orange Jell-O®
    2 cups boiling water
    2 cups ice water
    ½ cup finely shredded carrots
    Mint leaves

1.  In a large bowl, stir the gelatin into the boiling water.

2.  When the sugar granules have dissolved, stir in the ice water
      and carrots. Pour into a mold or glass serving dish.

3.  Refrigerate until set or at least 4-6 hours. To release the gelatin,
     set the mold in a warm water bath, dry then invert onto a serving
     plate. Decorate with mint leaves.

     Hint: Make ice water by placing ice in a 4-cup glass
     measuring cup. Add water to the 3-cup mark, then measure
     out two cups of ice water by using regular measuring cups.
