Italian Flank Steak

When broiling, always keep the oven door open as it involves very hot, close, direct heat. This steak is also excellent grilled outside. Teriyaki marinade or Italian dressing is a good substitute for the homemade marinade recipe.

    1 (1 ½-pound) flank steak
    ½ cup olive oil
    2 tablespoons fresh lemon juice
    1 tablespoon sliced green onion
    1 garlic clove, minced
    1 tablespoon meat tenderizer
    ½ teaspoon dried oregano
    ½ teaspoon dried parsley
    ½ teaspoon granulated sugar
    ¼ teaspoon sliced fresh chives
    ⅛ teaspoon ground black pepper
    ⅛ teaspoon seasoning salt
    Pinch ground cayenne

1.  Place meat in a 13 x 9 x 2-inch glass baking dish.
 
2.  In a medium glass bowl, mix the olive oil, lemon juice,
     onion, garlic, meat tenderizer, oregano, parsley, sugar, chives,
     pepper, salt and cayenne. Pour over the meat and cover. Place
     in the refrigerator and marinate for 48 hours.

3.  Place meat on a nonstick broiling pan and broil both sides.
 
4.  Slice thinly on the diagonal. Serve with pan juices.
