Homemade Pork Sausage
You may enjoy making your own “leaner”
pork sausage or you can make this recipe with ground turkey. Allspice was
discovered by the Spaniards in Jamaica in the early 16th century. The
small sun-dried dark brown berry is similar in taste to cinnamon, cloves and
nutmeg. It is used for both savory and sweet dishes.
½ cup fresh
whole-wheat bread crumbs
2 tablespoons fat-free
milk
14 ounces fresh ground
pork or turkey
1 garlic clove,
crushed in a garlic press
1 teaspoon seasoning
salt
1 teaspoon dried
parsley
½ teaspoon ground
black pepper
⅛ teaspoon
ground mace
⅛ teaspoon
ground allspice
4 juniper berries,
crushed in a mortar with a pestle
1 teaspoon sage
leaves, crushed in a mortar with a pestle

1. In a large bowl, soak the breadcrumbs in
the milk. Stir in the
