Ham with Apricot Glaze

 

Apricots have been cultivated in China for over 4,000 years. As a child, I used to love the taste of apricot kernels (inside the apricot pit) because they tasted like almonds. Now I’ve learned they are poisonous until roasted. They are also used to make amaretto and macaroon cookies. This is a perfect side dish when you have ham slices and have run out of bacon.


    6 Black Forest ham slices
    ¼ cup apricot jam
    2 teaspoons clover honey
    2 teaspoons dark brown sugar
    Pinch powdered ginger

 

1. Preheat the oven to 350˚.

2. Overlap ham slices on an ovenproof ceramic platter or
    serving dish.

3. In a small bowl, mix the apricot jam, clover honey,
    sugar and ginger.

4. Spread over the center of the ham slices with a pastry
    brush. Bake in the preheated oven for 15–20 minutes.
