Grandma’s Baked Salmon

The secret to this recipe is dill. It is also one of the dominant seasonings in Scandinavian cuisine. A very hot oven helps to get the salmon on the table fast. The salmon is best fresh and may be marinated in the dill mayonnaise for 24 hours. We serve this dish with buttered rice, vegetables and wheat rolls with homemade strawberry or raspberry freezer jam.

    4 salmon filets
    ¼ cup mayonnaise
    ¼ teaspoon dried dill weed
    1 teaspoon fresh lemon juice
    Pinch salt
    Ground black pepper

1.  Preheat the oven to 450 .

2.  Lay the salmon pieces on a nonstick broiler pan.

3.  In a small bowl, mix the mayonnaise, dill weed, lemon juice,
     salt and pepper.

4.  Spread the dill mayonnaise over the salmon filets.

5.  Bake in the preheated oven for 15 to 20 minutes.

     Salmon: When possible, purchase salmon the day you
     intend to cook it. The peak season for wild salmon is April to
     October. Farmed Atlantic salmon is available year-round.
     Connoisseurs favor the King salmon from Alaska.
