Garlic and Basil Shrimp  

    1 teaspoon olive oil
    7 ounces frozen or fresh shelled shrimp with tails
    10 sprays I can't Believe it's not Butter spray
    1-2 tablespoons fresh chopped basil
    1 garlic clove, pressed in a garlic press

    1 tablespoon lemon juice

    Fleur de Sel
    Freshly ground Tellicherry peppercorns

    1 teaspoon olive oil

    ½ yellow summer squash
    2 baby Portobello mushrooms, sliced

 

1. In a large frying pan, fry the squash and mushrooms in oil until done.
    Keep warm in a smaller frying pan on low heat.

2. In same frying pan, fry shrimp in olive oil until done. Spray
    with butter spray if desired. 

3.  Place the basil leaves, garlic and lemon juice in one bowl.
     Add all at once and stir quickly for a few seconds. Remove from

      heat.

4. Sprinkle with some Fleur de Sel or salt and freshly ground pepper.

    Toss and serve immediately with vegetables.
