Gelatin
Gelatin
is a universal favorite to serve as a side dish, salad or dessert. Canned
pineapple must be used, as the natural enzymes found in fresh pineapple will
prevent the gelatin from setting.
1 (3-ounce) packet lime Jell-O®
1 (3-ounce) packet
raspberry Jell-O®
3 cups boiling water
¾ cup canned
pineapple juice
½ cup canned
pineapple pieces, drained
¼ cup fresh
blueberries
1 apple, peeled and
chopped
1 banana, peeled and
sliced
½ cup
mini-marshmallows

In a large bowl, dissolve the lime and raspberry gelatin in
boiling water.
Stir in the pineapple juice. Cool for about
15 minutes.
2. Pour into a serving dish or
mold. Add the pineapple pieces,
blueberries,
chopped apple, sliced banana and marshmallows.
3. Cover and refrigerate 4 hours.
When set, unmold by
dipping mold into a warm water bath, wipe dry, then invert
onto a large plate.
