Filet Mignon with Asparagus
This is a spicy meal because the meat is
rubbed with a spice rub and the asparagus is seasoned with Tellicherry
peppercorns.
1 small bunch asparagus (makes about 1 ˝ cups)
10 sprays I can’t Believe it’s not Butter Spray
Seasoning salt
Freshly ground
Tellicherry peppercorns
1 tablespoon freshly squeezed lemon juice
1 filet mignon
Rub with Love “Steak Rub” seasoning
˝ teaspoon oil
1. Preheat oven to 425 degrees.
2. Lay
asparagus on a chopping board and cut off 2 inches of stems.
3. Line a 13 x 9 x 2-inch glass baking dish
with foil. Lay asparagus on foil.
Spray with butter spray then sprinkle with seasoning salt and
pepper.
Sprinkle with lemon
juice. Place in oven for 20 minutes.
3. Start making the steak 10 minutes before
asparagus is done. First rub
steak rub seasoning on both sides of steak. Heat oil in
frying pan and then
fry steak on both sides to desired doneness. I usually get
impatient and cut
the steak up into
smaller pieces. It cooks more quickly this way.
4. Serve
asparagus with steak.
