Flour Tortillas
Quesadillas
pronounced "keh-sah-dee-ahs" are made by topping plain tortillas with
Mexican cheese and grilled chicken pieces. They may then be folded in half and
heated in a frying pan.
2 cups all-purpose flour
1 teaspoon cornstarch
1 teaspoon salt
⅛ teaspoon
baking powder
Pinch baking soda
1 cup warm water
2 tablespoons canola
oil
¼ teaspoon clover
honey
½ cup all-purpose
flour
1.
In a large bowl, use a wooden spoon to stir the flour,
cornstarch, salt,
baking powder and baking soda together.
2. In a small bowl, mix the water,
oil and honey. Stir into flour
to make a soft
dough. Use up to ½ cup more flour if needed.
Set on a
well-floured board and cut into 6 pieces.
3. Roll into balls, then roll as
thin as you can. Pick up a tortilla
and stretch it
with knuckles of both hands if necessary.
4. Fry a tortillas on a lightly
oiled 13-inch griddle.
Hint:
Spread cooked tortillas with butter and fry again.
