Baked Chicken Salad

Make the chicken a day ahead so it has time to get nice and cold in the 
refrigerator. Unless you like warm chicken in your salad. 

    1 chicken breast on bone, remove skin
    Garlic salt
     Paprika
     Pepper
     Poultry seasoning

     2 cups lettuce
      1 celery stick, sliced

     2 tablespoons Wishbone “light” balsamic and basil vinaigrette  

 

1. Day before or earlier in day – Place foil in a glass pie plate or small
    casserole dish. Place chicken in plate or dish. Sprinkle with garlic salt,
    paprika, pepper and poultry seasoning. Bake at 350 degrees for 1 hour.

2. Day Two or later same day – Place lettuce on a dinner plate. Top with
    celery and sliced chicken. Drizzle with vinaigrette and serve immediately.
