Apple
Raisin Coleslaw
Serve
this cooling dish with spicy Indian food or at your next barbecue as a side
dish. Coleslaw is derived from the Latin word "colis" for cabbage and
the Dutch word "sla" for salad. Napa cabbage is milder than the common
green cabbage and is distinguishable by its oblong shape and lighter green
color.
4 cups thinly sliced Napa cabbage
2 Braeburn apples,
cored and thinly cut into half slices
⅔ cup raisins
⅔ cup mayonnaise
1 tablespoon dark
brown sugar
2 tablespoons fat-free
milk
Dash ground cinnamon
1.
In a large bowl toss the cabbage, apple and raisins.
2. In a small bowl, stir
mayonnaise, sugar, milk and cinnamon
just until
blended.
3. Drizzle the dressing over the
coleslaw and toss well.
4. Refrigerate until serving time.
